Brasa’s Christmas Set Menu is built for a long, celebratory dinner where fire, finesse, and great bottles do the heavy lifting. The journey starts with a sweet potato tart with smoked ricotta and fermented black fig, followed by cured hamachi crudo with yuzu pearl and kaffir lime leaf foam, then langoustine tortellini in a creamy bisque with chilli oil. For mains, choose between Wagyu striploin MB 8/9 or Australian grass-fed lamb loin with truffle potato espuma and Cameron Highlands white corn, before finishing with a deconstructed apple crumble with apple compote and seasonal ice cream.
